Chocolate Chia Peanut Butter Muffins

This is my third batch of mini muffins. I incorporate steel cut oats, chia seeds, coconut, and peanut butter so they are filling. I’m always tempted to eat the entire pan because they are miniature.

My goal is to also make snacks that are sugar-free. I have experimented with Medjool dates (my favorite) and now I’m working with maple syrup. There’s a slight difference.

  1. 1. Pre-heat oven to 375 degrees. 2. Mix dry ingredients together 3. Stir in almond milk 4. Add maple syrup, coconut oil and peanut butter. 5. Spoon into muffin pans and cook for 9 – 11 minutes.
