Curried Potatoes & Vegetables

Cooking is creativity, inspiration, and alchemy. It is a time of experimentation and trust. When you are open you allow spirit to guide you to wonderful results.

I was open to guidance the more I released what wasn’t needed in my life. Cooking is where I can ultimately let go and let goddess. I rarely rely on measuring cups or spoons.

Spirit guided me to bake more. I started making bread (something I feared), cakes, and cookies from scratch. I have an enormous sweet tooth. Allowing myself to be guided by spirit tempered my cravings. I baked and gave a lot away.

Cooking with spirit has moved me to share more as well. Below is a dish I made while staying at a house that is off grid.

Ingredients

Instructions
  1. 1. Heat pan on medium heat. Add sesame oil and cook potatoes to desired tenderness. Remove potatoes from pan and set aside. 2. Heat pan on medium heat, add sesame oil then whole spices. Warm until spices smell aromatic. 3. Stir in okra. Let cook for 5 minutes. 4. Stir in carrots and tomatoes. Partially cover pan with lid. Cook for 5 – 7 minutes. 5. Add potatoes and turmeric, garam masala, garlic, and amchur. Cover pan and cook for 10 minutes. 6. Add parsley and sea salt to taste.
